SUMMARY: The primary purpose of this position is to assist in the Carolina Dining Room Manager daily operations for Food & Beverage in the Carolina Dining Room and in room Dining, including overseeing social functions located at the Carolina Dining Room.
You will also be responsible for maintaining the standard for guests receiving the highest level of service set by the resort.
Must be willing and able to work various/multiple outlets and shifts within the Food and Beverage Division.
This position is reporting to the Carolina dining Room Manager.
EDUCATION AND EXPERIENCE: Associate Degree and a minimum of three years related experience; or equivalent combination of education and experience.
ESSENTIAL DUTIES AND RESPONSIBILITIES: • Assist in overseeing the operations of the Carolina Dining Room and In Room Dining.
Floor Presence is required • Ensures Member/Guest satisfaction in their dining experience.
• Ensure all Employees are trained in accordance with Pinehurst standards • Check all areas of responsibility before and after service for cleanliness, maintenance needs, and proper set-up.
• Ensure rooms are properly set for all meal periods.
• Prepare server side work and stations; check for completion before/and after service.
• Complete paperwork daily/weekly (i.
e.
deposits, tips sheets, forecasts, cover counts and schedules).
• Maintain inventory of liquor, beer, wine, sundries and food products sold in the Carolina Vista Lounge and the area of operations to levels set forth for department.
• Conduct daily line-ups.
Service training, and Safety Training.
• Perform bartending, serving and expediting duties.
• Participate in the performance review process for all dining outlet Employees.
• Participate in the disciplinary counseling for all dining outlet Employees.
• Ensure proper supplies are on hand at all times in order to effectively service the guest.
• Ensures adherence to the Standards of Operation and company policies.
• Ensure that all Products are purchased, requisitioned, and inventoried properly in EATEC.
• Maintain Health Standards.
• Ensures compliance with Safety Standards.
• Review all Carolina Dining Room Resumes and BEOs to ensure supplies and teams are ready for special events.
• Responsible for handling all guest concerns that arise in dining outlets • Responsible for the development of staff in dining outlets (busser to server, etc.
) • Responsible for ensuring all reports are completed in a timely manner, i.
e.
, menus scores, special events summaries, maintenance walk through.
• Assumes total accountability for all outdoor areas.
• Complete weekly schedule by Saturday.
• Complete weekly Time Sheet audits to ensure Payroll Control.
• Monthly tracking of staff benefit hours during established months • Greet and seat guests, monitor the consistent use of the standards of service for the venue.
• Proficient with Info Genesis and required paperwork • Is familiar with pertinent ABC laws • Assist with Period End inventory and respond to P & L statement.
• In this position you will be expected to be available to work in various locations of Food and Beverage outlets depending on business levels.
In addition, you will be expected to work holidays wherever needed even if your primary outlet is closed.
SUPERVISORY RESPONSIBILITIES: Manages hourly staff, a total of 30 - 40 Employees at the Carolina Dining Room and In Room Dining.
Is responsible for the overall direction, coordination, and evaluation of the Carolina Dining Room and In room Dining Food and Beverage outlets.
Also directly supervises various non-supervisory employees.
Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws.
Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems both front and heart of the house.
You will be expected to work holidays wherever needed even if your primary outlet is closed.
